Then I went back to work last May, and it all came crashing down around my ears. Suddenly having to shoehorn 28 hours of work into each week meant some things had to go by the wayside, and the first thing to go was the meal planning. We started eating more ready meals, junk and takeaways, and unsurprisingly all the weight that I had worked so hard to lose started creeping back. Hence one of my New Year resolutions for this year is to address my weight issues. I’ve got more blog posts brewing about this, as it’s a big subject, but one of the things I need to get back to doing is meal planning.
I’ve discovered, through my friend Kate’s blog, the Five Fs, that there is a “meal planning Monday” link-up hosted over at Mrs M’s Blog. So I am going to try to be organised enough this year to not only plan my meals for the week ahead at the weekend, but also to blog about it and link up with other like-minded planning people! I’m not yet sure if this is going to make me more or less inclined to actually do it!
My week tends to split into two halves. Monday to Thursday it’s just the geekdaddy and me to feed as the children eat at nursery. We eat our main meal in the evening once the kids are in bed, and these meals need to be quick to prepare, so I’m mostly going for a very simple “meat and vegetables” approach. Then Friday, Saturday and Sunday I cook a main meal at lunchtime for the whole family. So my meal plan will be split in two accordingly.
I’m not following any specific “diet” at the moment (again, more about this in a future blog post), but I am focussing on eating less sugary and processed foods, so my meal plan should reflect that. Let’s face it, cooking every meal from scratch is a VAST improvement on where we have been over the past few months! I’m actually quite pleased to be not following a specific diet at the moment, as it gives me the chance to try out some of the recipes from the My Daddy Cooks recipe book that I bought a couple of months ago but haven’t tried yet!
I am feeling very smug that I have not only planned meals for every day this week, but I have already done the shopping for them, so we’re all ready to go. Here’s how my week shapes up:
Beef stir fry
Chicken breasts stuffed with cream cheese wrapped in Parma ham
Friday, Saturday, Sunday
Sausages, beans and mash (ok, not quite “from scratch” here, but I have to have one “easy” meal a week!)
Beef stew (probably the My Daddy Cooks one, and hopefully prepared in the slow cooker in advance!)
Minty lamb and butternut squash tagine (again, from the My Daddy Cooks book)
So that’s how my week looks. Let’s see if I can stick to it!
