Last week was an exceedingly busy week, but I’m pleased to report that I (mostly) managed to stick to my meal plan made last weekend. My Mum was a star and came over on Friday to help me get the washing up and general housework under control, and I’ve managed to keep everything together since then, including making my meal plan for the week and dashing around Waitrose with the geekdaughter to buy all the supplies. So I’m feeling as prepared and ready for the week ahead as I can be.
The meal plan last week mostly worked – we stuck to it with the exception of the day I was going to cook something from the freezer for the whole family – when it came to it the geekdaddy took over and made tuna with pasta and cheese sauce for all of us – one of the kids’ favourites. The new dishes I tried all worked well, although I’m sure if I’d managed to get chicken mince the Thai minced chicken with basil would have been a better consistency – the turkey that I used instead made it quite lumpy.
I did slip up a little on the whole “healthy eating” thing though. I must confess that on Thursday when I ended up working pretty much the whole day instead of having the day off I should have had, my self control gave in at lunchtime and the geekdaddy and I ended up eating at McDonald’s. And on Saturday when my Mum very kindly took the geekdaughter to a local pantomime, we ended up with a Subway cheese steak sandwich for lunch (we did manage to talk ourselves out of KFC though, so that wasn’t as bad as it could have been!).
So on to this week. Again I’m going for simple meals for the geekdaddy and I to eat together on the days the kids are at nursery, and then a selection of family meals for the weekend.
Meals for the geekdaddy and me (Monday – Thursday):
- Beefburger in wholemeal bun with salad (I found some very nice sounding Aberdeen Angus burgers with red wine and herbs in Waitrose)
- Chicken stuffed with Boursin wrapped in Parma ham
- Gammon steaks (probably marinated in honey and Dijon mustard then grilled – from My Daddy Cooks)
- Something with tuna steaks
Meals for the family (Friday – Sunday):
- My well-known “what veg needs using up?” spaghetti bolognese
- Tuna and pasta in cheese sauce (yup, going to get the geekdaddy to cook his speciality again)
- Creamy pork stroganoff (from My Daddy Cooks)
It’ll be another long work week for me this week, but I’m hoping that having a good meal plan will mean that I keep cooking decent meals from scratch, rather than resorting to ready meals and takeaways! I’ll let you know how it goes 🙂
