On the whole I’m pretty pleased with how well the meal planning worked out for last week. We only deviated from the plan on one night, which was when I forgot to take the fish pie out of the freezer to defrost, so we ended up with a takeaway. One major disappointment was that of the three family meals that I cooked, only one was eaten by both kids with great relish, and that was the sausages, mash, and beans. Both of them turned their noses up at my lovely chicken and apricot casserole, and whilst the geekdaughter ate my rich pork ragu with spaghetti, the geekson again refused to eat any of it and would only eat the spaghetti (with his fingers!).
To add the ultimate insult to injury, on the day that they both refused my lovely casserole the geekdaughter then requested a Pot Noodle for tea, which she polished off in its entirety. Sigh.
Read on to find out what I’m planning to dish up this week to attempt to get my kids eating decent food!
This week has an added complication to it because it’s the Focus on Imaging show at the NEC in Birmingham, which is THE big photography trade show of the year, and as a photography blogger the geekdaddy will be there covering it, probably all 4 days. This means a lot of juggling of arrangements, and no guarantees that he’ll be home to eat dinner with me for any of the days. So my meal plans for the days it’s just the two of us are for meals which I can easily cook half of for me, and he can cook his half when he gets in. In addition I’ll be off work on Tuesday to look after the kids (as that’s usually his childcare day), and I’ll cook a main meal for us to have at lunchtime which he can then reheat when he gets in. Thank goodness this doesn’t happen all that often!
So here’s what our week looks like:
Meals for the geekdaddy and me (Monday, Wednesday, Thursday):
- Tortellini stuffed with ham and cheese (bought, not made!), cheese sauce and salad
- Beefburgers with salad
- Chicken and chorizo pie (bought again) with mash and oven-roasted vegetables
Meals for the family (Tuesday and Friday – Sunday):
- Chicken and ham pasta bake
- Sausages beans and mash
- Lancashire hot pot (possibly in the slow cooker)
- Tuna, past and cheese sauce
