Another week gone, and in spite of all the mad running around the geekdaddy did, driving to and from the NEC at Birmingham for four days in a row to cover the Focus on Imaging show, we managed to stick to last week’s meal plan pretty well. We narrowly avoided disaster when I realised I had failed to defrost the chicken in time to make the chicken and ham pasta bake, but fortunately had some left over pork ragu which was supposed to be frozen but was sitting in the fridge as I hadn’t got around to putting it in the freezer. So I used that as a substitute meal instead – whew.
This week is hopefully going to be a pretty easy week for me in terms of cooking, as I’ve worked out I won’t actually have to cook any family meals at all.
Yes, no family meals at all. On Friday we have some good friends coming over to visit for a combined business meeting and excuse for a Chinese takeaway, so no need to cook then. On Saturday I’ve arranged to take the kids shopping with my Mum – they both desperately need new shoes – and we’ll go out for lunch all together. Then on Sunday it’s Mother’s Day, and as I flatly refuse to either cook or wash up on Mother’s Day we’ll be going out for Sunday lunch with the extended family – fun but probably chaos!
I am making a little resolution though. I am trying to make better use of my slow cooker, so in the time I would have been cooking family meals during this week I am going to read through my slow cooker recipe book and see if I can find something to make for the family next week.
Meal planning for meals for the geekdaddy and I to have on work days was made easier by our local town farmers’ market which I took both kids to on Saturday. There’s a great selection of local produce available, and I managed to get two meals sorted there and then.
So here’s what our week looks like:
Meals for the geekdaddy and me (Monday – Thursday):
- Individual beef and ale pies (thank you farmers’ market!) with vegetables and mash
- Minted lamb burgers (farmers’ market again) in wholemeal buns with salad and coleslaw
- Chicken stuffed with boursin wrapped in parma ham (my trustly old favourite)
- Using up one of the ready meals we’ve got in the freezer
Meals for the family (Tuesday and Friday – Sunday):
- Chinese/Thai takeaway
- Lunch out
- Mother’s Day Sunday lunch at a local pub
