Meal planning Monday 26/03/2012 – trying to restore normality

I predicted that last week was going to be a bit all over the place, and it really was. We did a lot of eating out, some planned, some not. I planned Indian takeaway and a pub lunch for when my father was staying, because I find him difficult to cook for. We had a good time with my Dad, but it’s difficult having someone in your house twenty four hours a day, and so the geekdaddy and I needed a bit of a break after he’d gone home. In a fit of great planning I had the day off work and the kids were in nursery, so we did a bit of retail therapy at the Trafford Centre, and ended up with an unplanned trip to the all you can eat Thai buffet. It was delicious, but did result in another meal out rather than home cooking…

On the way home from the Trafford Centre on Thursday we drove past the Cheshire Smokehouse, which is something I drive past on my way to work every day and have always wanted to visit. As we were in no hurry we decided to pop in, and I am so glad we did. The place is amazing! Absolutely huge, and stocked floor to ceiling with delicious food. I was amazed at the selection, and in particular the amount of stuff they produce on site – not just smoked goods but also bread and cakes, meats, and a great range of prepared food. We picked up a few things, one of which features on my meal plan this week. I can see me popping in there on my way home from work more frequently now, and I can’t believe I’ve driven past it for so many years without investigating!

Looking forward to the week ahead, and I’m hoping we’ll be back to “normality”. I’m working Monday – Thursday, so I’m planning a selection of easy, quick meals for myself and the geekdaddy. We’ll then have a couple of family meals, and then on Sunday we are off to Drayton Manor with some friends in order to help celebrate our Guide-son’s second birthday, so I’m expecting to eat out whilst we’re there.

So here’s what our week looks like:

  • Lamb stew (left over from yesterday)
  • Italian chicken breasts (stuffed with soft cheese and pesto – a treat from the Cheshire Smokehouse)
  • A ready-made pie (whatever takes my fancy when I’m doing the online shop)
  • Beef stir fry (this is the meal we missed from last week’s plan)

Family meals for Friday – Sunday:

  •  Sausages, beans and mash
  • Something from the freezer (probably spaghetti bolognese or stew)
  • Meal out at Drayton Manor

Busy week for you again, are you sure you’ve got time to eat?! Even as a veggie the sound of that chicken breast sounds lovely.
