I am sitting here at my desk, it’s Sunday evening and I’m trying to come up with a meal plan for next week. It’s not going very well – I’m tired and struggling to concentrate. I was awake at 5:15 this morning, and I mean really awake. I have no idea why – I didn’t wake up with something on my mind – like sometimes you wake suddenly thinking “on no! I left the gas on!” or something. It wasn’t anything like that, I just woke up and was awake. Very irritating. Perhaps it was some kind of “come down” following on from BlogCamp on Saturday, or maybe it was down to the fact that we only had one child in the house, as the geekson stayed the night with my Mum. Anyway, whatever the reason, today started very early. And it’s been a long day because it was the annual Transport Festival in my town which meant we spent most of the afternoon wandering around looking at old cars and trucks, listening to the Town Crier competition, missing the hog roast and letting the kids go on all the roundabouts!
So I’m so tired after two busy days and not enough sleep that I can’t even remember what we ate last week. I think it all went to plan. I am sure if there’d been any major disasters I’d remember, right?
Looking forward to this week we’re going to be busy again. It’s only a three day working week for me as I have a day off on Tuesday to take the geekdaughter back to Alder Hay for her physiotherapy appointment. Then Friday is going to be a BIG DAY as we will finally know what the result of our primary school application for the geekdaughter is. Yes I know, it feels like the rest of the world already knows their outcomes, but we’re still waiting here, and it’s been a very long wait indeed.
Given that my brain is distinctly addled at the moment, I’ve been struggling to make my meal plan, so I’m falling back on some old favourites for ease!
Monday: Chicken breast stuffed with garlic butter wrapped in bacon (bought, not from scratch!)
Tuesday: Nothing planned, probably a meal out after the physiotherapy appointment
Wednesday: Pork steaks in a creamy mushroom and mustard sauce
Thursday: Beef stir fry
Friday: Something from the freezer – either stew or spag bol
Saturday: Fish fingers (special request from the geekdaughter)
Sunday: Oven-baked risotto
