I am so pleased last week is finally over. After having been in London for the BritMums Live blogging conference last weekend I then needed to be back there again for three out of the five working days last week for work reasons. It’s probably the first time I’ve travelled in the train enough to make it worth paying for a 30 day WiFi pass on the train rather than buying 24 hours at a time.
The downside of travelling that much in a week is that it wreaks havoc with your ability to meal plan. So we ended up with rather more takeaway meals than we would normally have, and I’m fine with that as it was a remarkable week. This week, however, we’re firmly back on the wagon, with a proper meal plan.
We have one very exciting day to look forward to this week – on Wednesday it’s the last of the geekdaughter’s settling in visits to her new school, and this time we get to go along with her, and try a school dinner! There was a choice of roast turkey or a jacket potato, so I’ve signed us all up for the turkey, and I’m hoping it’ll be satisfying enough that I don’t need to cook in the evening.
Other than that it’s just a back-to-normal week at home, which I’m looking forward to very much given the racing around of last week.
So here’s what we’re going to be eating this week:
Monday: Tuna steaks
Tuesday: Chicken breasts stuffed with Boursin wrapped in Parma ham (an old favourite)
Wednesday: school dinner
Thursday: The geekdaddy’s monthly curry night; I’ll be eating a ready meal
Friday: Sausages, beans and mash
Saturday: Tuna and pasta in cheese sauce
Sunday: Shepherd’s pie (planning to make two so I can freeze one)

I love the sound of boursin chicken with parma ham. I’ll be adding this one to my list next week!
