Life as a working mother of two is always busy, but for some reason over the last couple of weeks it’s got super-hectic around here. I think it’s a combination of work going bananas coupled with the geekdaughter starting school and me needing to be even more organised about things than I have been previously. I’ve been getting into the bad habit of getting the work laptop out when I get home, which is always something I try to avoid. And as if that wasn’t enough we’ve embarked on a fairly major de-cluttering project which is also eating into my free time. So I’m trying to spend as little time meal planning and cooking as possible!
I’m still adapting to the changes in routine that come when your oldest child starts school. As I work part-time and the geekdaddy works from home I am accustomed to cooking a main meal in the middle of the day for those weekdays that we are all at home, as well as weekends. Of course, now the geekdaughter eats at school during the week, so I’m having to get used to cooking for only three on those days. But then if I have something left over from lunch she might eat it for tea. I’m still working out how best to do everything – it’s all change, but it’s all good.
Here’s my meal plan for this week:
Monday: fast day, so no main meal to plan
Tuesday: Minted lamb pie with mash and veg (the pies are from our farmers’ market, not made from scratch!)
Wednesday: second fast day
Thursday: Steak in peppercorn sauce with chips and veg
Friday: Beef and guinness stew (reheated from the freezer)
Saturday: Oven baked risotto (menus4mums)
Sunday: Quick Indian chicken rice (menus4mums)
