I must confess I’ve been struggling with my meal planning over the last few weeks, which is probably why I’ve not been so diligent about writing them up each week. After a lot of thinking about the situation I had a bit of a “Eureka” moment last week – I realised that I struggle the most on my working days. After I’ve come home from work and we’ve got the kids in bed the last thing I want to do is cook a meal. I’d been trying to find dishes to cook that were easy and quick, but even they were proving too much, so the geekdaddy and I were getting into the habit of ordering takeaway instead. And as often happens in these situations, the minute I understood the cause of the problem, I could figure out a solution…
The geekdaddy and I are still following the 5:2 eating plan, which means that two of the days I’m at work we don’t need to cook an evening meal (on fast days we both only eat one meal a day, and I have mine from the work canteen whilst he tends to go out for a big breakfast). I’ve recently changed my working hours which means there’s now only one other day in the week that we need to feed ourselves in the evening after I’ve been at work. So I’m either going to make sure I cook extra at the weekend so that we can eat leftovers, or I’m going to give us permission to have a takeaway just once.
I’ve also been struggling with the grocery shopping recently. I’ve been shopping online as I just didn’t have space in my week to get out to the supermarket. However recently I’ve found myself struggling to even pull my online order together. So with my new working pattern that gives me an extra free day mid-week I am going to go back to shopping in store. Hopefully this will be another change for the better.
So with all my new resolutions coming together here is my meal plan for this week:
Monday: Fast day
Tuesday: Tuna pasta bake (left over from the weekend)
Wednesday: Fast day
Thursday: Savoury minced lamb
Friday: Takeaway (we have some friends coming to stay for the weekend)
Saturday: Chicken and Mushroom Risotto
Sunday: Lamb and Pasta Bake.
